My Prawn Tacos with Fresh Mango Salsa Recipe

As summer is upon us, I thought it would be important that I share a great recipe. Recently, I made these delicious prawn tacos with fresh mango salsa for my family and everyone loved them. They were quick to make and were much more healthier compared to any deep fried fast food option. The tender prawns with the sweet and tangy mango and crisp corn tortillas made for an excellent meal.

Prawn Tacos with Fresh Mango Salsa

Prawns
Fresh Mango Salsa
Corn Tortillas
Prawns, Torillas, Mango Salsa, Cilantro
Recipe:
Prawn Filling
Substitutes:
chicken
shrimp (my prawns were not as big as I thought they would be. They look more like shrimp in the photo)
Basically any type of meat or meat substitute would be great. Be creative!
*if using tofu, use firm tofu*
Marinade for Prawns:
Ingredients:
- 1 lime juiced
- 2 large cloves of garlic; chopped roughly
- Half a large Jalapeño pepper; include the seeds to add additional spice but can remove if too much
- Cracked black pepper (to taste)
- 1/2 to 1 teaspoon of maple syrup (can use honey)
- A splash of balsamic vinegar
- A healthy drizzle of olive oil
- Minimum of 1 pound of prawns; I had roughly 1.5 pounds and had enough marinade; can be used for up to two pounds of prawns; preferably use fresh raw prawns to cook as they will absorb the flavors better
Method: Marinading Prawns
1. Clean prawns throroughly and set aside in another bowl
2. Juice one lime into a large mixing bowl
3. Take two large cloves of garlic and roughly chop them and add to lime juice
4. Roughly chop up half a Jalapeño pepper and add to lime juice - chunks should be bite size
5. Add black pepper, balsamic vinegar, olive oil and maple syrup to lime juice and check seasoning
6. Add prawns to mixture and mix well.
7. Leave in the fridge to marinade for roughly 30 minutes.
Method: Cooking Prawns
1. Heat up a large non stick frying pan at medium high heat
2. Drizzle lightly some avocado or olive oil if needed
3. Add in prawn mixture and cook for roughly 6 minutes or till shrimp is fully cooked. I suggest googling tutorials to explain this better. They should not be grey but pink and more curled then when they were raw.
4. Once cooked, transfer onto plate when ready to serve.
*can work in batches to cook the filling if that works better for your frying pan. Do not overcrowd the pan.*
Fresh Mango Salsa
Ingredients:
- Two large mangoes diced/ cubed and the juices of the mangoes leftover
- 2 - 4 garlic gloves diced finely
- Half of Jalapeño diced finely with no seeds
- 1/4 of a small red onion diced finely
- 1/2 of a lime juiced
- Cracked black pepper (to taste)
- A light drizzle of olive oil
Method:
1. Cube up two large mangoes and add to a medium sized mixing bowl. Make sure to add in any juice from the mangoes if possible
2. Finely dice up garlic, onion, jalapeño and add to mango mixture
3. Juice half a lime and add to mixture
4. Add cracked black pepper and olive oil.
5. After testing seasoning, place in fridge till ready to serve.
Tortillas:
1. Heat frying pan using medium high heat
2. heat both side of tortilla for 15 seconds or till crispy and some colour has been added
*follow package instructions
3. Add to plate for serving
